I wonder which css file I should edit. I wonder if any of the new css files get overwritten when updates are applied.

The CSS file in question would be based on the specific page item you are dealing with. If you use Chrome or FireFox, you can use its inspector tool which shows the specific CSS file.
As for updates, Miva has stated that they wont update CSS files directly.Bruce Golub
