We sometimes have very long orders. The ability to copy an order and then pick the customer and make specific edits would be very helpful.

Miva does provide a "New Order" button which functions as a copy order, but it intentionally does not include order items. Do you have a lot of repeat orders that are very similar or can you help me understand your use case better?
One suggestion you can do today is our Order History area in My Account allows you to re-add all the items from a previous order into a new basket. You could use Shop As Customer to log into the customers account and place the new order that way.
