Need help editing default values in select dropdown.

I'm editing a Miva site right now and I'm trying to edit the default value in the drop-down for the Country selector on the checkout page (Shipping Information). The current value is "<Select One>", but I want to remove the brackets from so it just says "Select One". I've been trying to figure it out for days.

Please help me. I'm new to Miva.

From the main Menu, select Stores, then select States. Click the Add button (plus sign), and add it. (Leave Code blank.) If its not the first in the list, click the Sort button (up/down arrows). Enter -1 for the sort value and that should keep it as the top item.
