We want to add a coupon code to our "thank you for subscribing to our newsletter" email. Only want a shopper to be able to use it once. In my thinking, I would have to generate x amount of coupon codes and apply one to the email. Once one thank you email is sent then apply the next coupon code to the thank you email and so on and so on. Am I overthinking this or is there a better way to accomplish this goal?

We use a very simplistic method to achieve that same scenario. We have a common coupon code that is issued to all subscribers in the Thank You email. We limit the coupon to one use per customer in the coupon settings (which is based on the customer's email.)
The simplicity of this solution does leave it exposed to customers "gaming" the coupon by creating new accounts with different email addresses, or sharing the coupon code with others, but we've very rarely noticed that occurring.

greggc If you set a maximum usage per customer to a coupon, then that usage is tracked by the email address associated with the order, not just a customer account. That way if a shopper checks out as a guest their coupon usage per email address is still checked.Psydde Delicious
